We hadn’t held a Cookbook Club Sunday Dinner in a year. I thought we’d do a repeat of last year’s End of the Summer Celebration on September 17 and as usual it was virtual and in-person. In the spirit of do-overs, Matthew Raiford’s cookbook, Bress ‘n’ Nyam, was featured again.
Everyone was invited to prepare their favorite dish. Since our dinner was the next day after the MS Delta Blues and Heritage Festival, I told my sisters in town not to worry about cooking. Figured they may have partied too hardy the night before at the festival.
From the cookbook, I prepared Spatchcock Chicken with Roasted Vegetables and Cowpea Salad; both with my own twists to the recipes. I added a green salad and tomato basil bread made from a pre-mix bought from The Crown Restaurant in Indianola. Cassandra baked a delicious pound cake and Thishya brought homemade spinach dip with chips.
It was wonderful to share a meal and lots of conversation with my MS sister friends Myrtis, Cassandra, Bea, Thishya, and Essie and sister friends Dianna (VA), Benita (NY), Pat (PA), and Gaynell (VA).
And before leaving some of them checked out the garden and outside art.
Until next time, have a good one.
End of summer dinner brought us all together once again. Ellen’s dishes came from the chosen cook book were mouth watering! My personal favorite was the crowder bean salad. Having mango and cilantro in it made it fresh and flavorful.
Cassandra’s lemon pound cake was the perfect way to end the meal. Lemony flavor and the light airy crumbs gave a well-balanced taste.
Dinner table was filled with joy and excitement with wedding talks and inspirational story shared by Cassandra about how she and her husband became fit and healthy by choosing well balanced meals and healthy movements like Zumba.
Later, we spent some time to see her vegetable garden and the newly added art work on the wall. Also…
I missed y’all!! I know all was well!! Until next to time!!
